pasta cravings

The thought of a big bowl of pasta and parmesan cheese, lots of ground pepper, pasta water with a knob of butter to top it all off (Cacio e Pepe) is THE ONE.

I try to incorporate as many veggies into every meal so I guess this isn’t the most nourishing of pasta dishes but boy does it taste good!

So here are some Vegetarian Pasta dishes, I have been making during COVID and will stick too these forever!

Mushroom Carbonara by Molly Baz for Bon Appétit

This one is a go-to of mine for when I fancy something eggy, rich yet vegetarian. Such a good take on the cult-classic, Spaghetti a la Carbonara.

Orecchiette with broccoli and rocket by Yotam Ottolenghi on The Guardian

Such a good veggie packed one - so so fresh and summery. Great to make ahead and take to picnics or just to have it on a rainy day on the sofa wrapped up in a blanket - so so good, I love the citrus touch from the lemon zest it really brightens up the whole dish.

Vegetarian Sausage Pasta by Waitrose

This one takes no longer than 20 minutes to make - so easy and simple yet tastes amazing! For leftovers topped it with a fried egg, hot sauce, some chilli flakes and some grated gran padano (even better than the day before!) Also instead of Linda McCartney Sausages I used 4 frozen Quorn Veggie ones.


Spaghetti with Tomato and Walnut Pesto by Andy Baraghani from Bon Appétit

Such a good Summery pasta dish full of freshness yet depth from the walnuts - so so good!

Disclaimer: this recipe does have anchovies for those who aren’t massive fans as I know it’s a Marmite ingredient. I personally love anchovies in pasta dishes as it gives it some umami-ness, as it just adds something to the dish.

Herby Gnocchi and Peas by The Detox Kitchen

My Mum asked me if gnocchi can be classified as pasta but I personally think it is as it still has flour and you boil it as you would with pasta, plus its very starchy depending on what root veg you use, its classically made with peeled mashed potatoes.
